1/4 cup white wine vinegar
1 tbsp dijon mustard
1/2 tsp dried dill
1/4 tsp each coarse salt and freshly ground black pepper
1/4 tsp ground nutmeg
1/2 cup olive oil
3 large unpeeled Red Delicious apples, thinly sliced
1/3 cup crumbled Requefort cheese
1/4 cup chopped walnuts
1 medium head romaine lettuce
1 bunch watercress
1 For dressing, combine the wine vinegar, mustard, dill , salt, black pepper and nutmeg in a small bowl and mix well. Add olive oil in a fine stream, whisking constantly until mixed.
2. For salad, combine apples, Roquefort and walnuts in a large bowl and toss to mix. Add 3 tbsp of the dressing. reserving the remaining dressing. Toss to mix well. Chill apple mixture, tightly covered, for 1 to 4 hours.
3. Trim the romaine and cut in fourths lengthwise. Trim the watercress.
