Nonna's Recipes

4 cups fresh shelled  peas
1/4 cups onions, sliced
1/3 cup olive oil
3 tbsp champagne vinegar
kosher salt, to taste
1/4 cup  fresh parsley, chopped
1/2 cup fresh chives, cut in half
1. Bring a large pot to a boil. Cook peas and onions in boiling water until tender, about 2 min. Drain well and transfer to a large mixing bowl.
2. In a small bowl, add olive oil, vinegar, salt and parsley, whisk until incorporated, Pour dressing over peas and toss well to coat. Spoon into serving plates and top with fresh chives. serve immediately.
