oatmeal raisin cookies
Ingredients:
3/4 cup raisins
3 tbsp orange juice
3/4 cup granulated sugar
8 tbsp (1 stick) butter, softened
1 large egg
2 tsp grated orange zest
1 cup all purpose flour
1 tsp baking soda
1 1/2 cups rolled oats
1 1/2 cups white chocolate chips
Directions:
  1. Combine raisins and orange juice in a small bowl. Let stand for 10 mins.
  2. Preheat oven to 350 F. Grease 4 baking sheets.
  3. Combine granulated sugar and butter in a large bowl. Beat with an electric mixer set at high speed until light and fluffy. Beat in egg and orange zest.
  4. Mix flour and baking soda in a small bowl. Add to butter mixture and mix well. Add raisin mixture, oats and white chocolate chips an mix well.
  5. Drop the dough by rounded teaspoonfuls 2 inches apart onto the prepared baking sheets. Flatten with a fork.
