Nonna's Recipes

1/2 cup butter
1 small onion, chopped
1 clove garlic, minced
1/4  cup flour
1 cup heavy cream
1 cup milk
2 cups chicken stock
4 cups broccoli, chopped
1/4 tsp cardarmom
1/4 tsp nutmeg
kosher salt, to taste
freshly ground black pepper, to taste
4 oz (110 g) colby jack cheese, grated
8 oz (225 g) sharp cheddar cheese, grated
1. Melt butter in a large pot over medium heat. Saute onion untio soft and translucent. Add garlic and stir a minute longer.
2. Add  flour, stiring constantly, unti lcompletely incorporated. Add heavy cream, milk, and chicken stock; bring just about to a boil, add broccoli, reduce to low, and continue to simmer for 20 mins.
3. Season with cardamom, nutmeg, salt and pepper. Add in the cheeses and simmer for about 10 mins. Stirring occasionally. Serve immediately.
